Following the harvest of ripe cherries, they were floated through hydraulic separation to remove green, overripe or dry cherries. The coffees were then fermented with oxygen for 24 hours before being dry-pulped and re-fermented for 72 hours with a fruit and yeast mixture - in this case, the fruit is cooked Mangos.
It was then sun-dried for 24 days.
